I've seen walls that didn't appear to be coated but on close inspection found remnants of coating in places, others I've found that didn't appear to even have any mortar between the rocks but again looking in the corners and more protected areas and there it is still visible. So it's hard to say, there are some construction methods that more commonly use it than others, but there could be usage related reasons, there could be personal preferences of the individuals, there could be environmental variables causing it to have deteriorated if present when in use etc etc....

I've actually pondered that myself...and I think anything you can add to a structure will help in insulation, even if the rocks are stacked tight with chinking. I think it has to do with the availability of materiel...some of the clays you encounter on dirt roads is variable in it's durability as well. Having to clean my trucks after driving on them when wet and spewing that stuff all over the place I've noticed that the Cedar Mesa goo washes off pretty easy...but some of the stuff around Escalante and north of Moab is like CEMENT!
You get that crap in the wheel wells and it'll literally stick for years even being blasted with rain water from the tires. Here I am after doing a total brain fart and getting stuck in a place I should never have driven into...it took me hours and hours to clean this mess up. Had to spend the night just like that and wait 'till about noon the next day for the road to firm up...4 wheel low, E-locker on didn't make a damn bit of difference. That's some good stucco, right there.
The end of the world for some...
