Depending on the snow year, you may be a bit early. A few years ago I did it mid April and encountered snow the last mile or so on the north rim. Water was already turned on, but I don't think that it had been on for very long.

From the South Rim and back, you can do the rim to rim to rim that time of year, but as mentioned, expect snow.
You can't however, do the rim to rim one way without skiing, snowshoeing, or walking for many miles to the North Rim. The opening date for the road to the North Rim is May 15 and seldom varies from that. The only exceptions have been in really heavy snow years when the road opened later. Even if it is a severe drought year and the snow is most gone, the gate is still closed until opening date.Utah is a very special and unique place. There is no where else like it on earth. Please take care of it and keep the remaining wild areas in pristine condition. The world will be a better place if you do.
