It's better than some on your list, and not as good as others.

If you're driving in from Las Vegas, you might consider Arrow Canyon near Moapa. It's just a short distance off I15 and up (north) rt 168. The approach track to the trailhead is a bit rough, but a 2wd rental will make it if you take it slow.

In the main canyon of Zion there is trail access to Hidden Canyon. Perhaps not a slot canyon, but it is narrow and offers various photo ops to include a couple natural bridges/arches.

And finally if you do head over towards Willis and Round Valley, you might also consider Hackberry via the Cottonwood Wash Rd access. Again, not a slot, but a very deep and scenic canyon.

Add Shelf Canyon to your list of slots (east side ZNP) has some really neat slot sections. http://www.citrusmilo.com/zionguide/shelfcanyon.cfm

I trief to make a plan so what do you guys think about it:

Day *4: Capitol Reef - Cassidy Arch and Sulphur Creek
Day *5: Capitol Reef - Cathedral Valley
Day *6: Capitol Reef - Surprise Canyon AND Headquarter Canyon OR
*******Brimhall Bridge - *Burr Trail to Escalante
Day *7: Escalante - Red Cave - Kanab (is there time for another canyon in
    this area?)
Day *8: Kanab - Clear Creek / Sheep Creek or Echo instead these two -
    Kanab
Day *9: Kanab - Canaan Mountain / Water Canyon - Red Cliffs Campground
Day 10: Red Cliffs Campground - before noon: Hiking in Red Cliffs,
*******later drive to: Cathedral Gorge - Red Cliffs Campground
Day 11: Red Cliffs Recreation Area - Kanarra Creek - Red Cliffs Camground
Day 12: Red Cliffs Campground - Valley of Fire - VoF Campground

Orderville in Zion is a great day hike. Bring a 30' of rope for handlines. water level in the narrows can be an issue in May, but i doubt it this year (no snow pack).
