Run up to Logan and up the canyon. Hike up to white pine or something. You turn off at Tony Grove.

Tons of short overnight options. Some of the more popular trips in the Wasatch are Red Pine Lake, White Pine Lake, or Maybird Gulch, all start at the White Pine trailhead in Little Cottonwood Canyon. Big Cottonwood has Broads Fork and Lake Blanche starting at the S-curve. Silver or Pittsburgh Lakes up Tibble Fork (American Fork Canyon) are good trips, although Pittsburgh requires 4wd (maybe just high clearance?) to get to. White Pine Lake in Logan Canyon is nice too. Pretty much you can pick a trail in the Wasatch and take your pack up it. Expect crowds anywhere within an hour of the city, although if you pick the less popular stuff you will of course see less people.
