I don't watch anything that requires a judge as it's not a sport. YMMV
Ski racing (alpine and nordic). Biathlon.
Not as into some of the snowboard stuff but I watch it as its fundamentally still folks sliding on snow.
Some of the freestyle is wild.
Will be fun to see the opening ceremony.
I prefer watching the winter Olympics more than the summer ones. I partially agree with Iceaxe that a judge shouldn't be required. My opinion of a sport is that the participant should raise a sweat. That excludes curling for a start.
But I can't be having with the "new" sports like half-pipe and mogul skiing being included at all. It's a bunch of poofs (of both sexes) strutting their stuff. Stay on the dance floor!
I also think the Olympic participants should still be amateurs, like it properly was.
Looking forward to all skiing events, but especially the downhill and every run of Shiffrin. I haven't enjoyed watching anyone else ski as much as her since Bode's prime. I'd love to see her win the slalom by 1.5 seconds or more. Barring injury I bet she beats Stenmark's victory record before all is said and done.
Will Fat Biking ever make it to the winter olympics?
I'm not sure about fat bikes, but there is no reason that cyclocross shouldn't be there. I'd love to see that.
Also, I've always been a big fan of the alpine and nordic ski races. No judges. Just a clock and some very fast skiers. Love it.
I'll watch Olympic Hockey and that's it. I'm hoping for a US v Canada Gold medal match. The rest of the events blow.
Hockey is great too. I forgot about that one, but I do like a good fight from time to time.

I have friends that are part of a curling club which essentially amounts to getting smashed while playing shuffleboard on ice. Might as well stick bowling in there too or darts or shuffleboard. The bigger issue I have with organizations like the Olympic Committee and FIFA is they're so damn corrupt and shifty. World Cup Soccer is one of my favorites (well, maybe not this next one) but it's tough to get behind games that inexplicably keep getting held in Russia or another shithole country. It all smells.

Also the short track speed skating gets crazy!
Figure skating drives me nuts. Can't watch it. While I appreciate their athleticism, it's a performance art (ballet on skates). I'm glad NBC now airs secondary coverage on a couple other stations so I can watch less popular (at least in the US) events like x-country skiing.
You should also track down the HBO Real Sports segment done just before the Rio games and the Real Sports segment from a few weeks ago. The Rio segment pretty much shows the Olympic committee to be more corrupt than FIFA, and the newest one doesn't exactly make the USOC look like saints. The whole idea of the olympic spirit or olympic ideals is a sham. Oh well. I still watch because I enjoy the sport of it.
Watched the moguls last night made me realize we need a new Johnny Mosely. How is it there are 2 dudes from Kazakhstan in the top 10 and only 1 American? Come on east coast skiers, step your game up!
I've been contemplating boycotting the Olympics due to them only letting 2 sexes participate, how unfair.......
