OK, Jaxx and fellow Bogleyites............ Here's how to make those awesome "Crock Pot Chicken Tacos"!

Ingredients:
2-3 chicken breasts (or you can use 7 or so chicken breast tenders)
1 can chicken broth
1 pkg taco seasoning
1 cup salsa
1 can corn, drained
1 can black beans, drained

Place the above ingredients in the crock pot on high for 3-4 hours on HIGH. Just before serving shred chicken and add:

1 cup sour cream
1/2 cup shredded cheese

Serve over piping hot Navajo fry bread, recipe below! Top with: Grated cheese, lettuce, tomatoes, onions, salsa, avocados/guacamole, or anything else that sounds good.

This stuff is runny, and can be eaten like a soup, so you could try that too.

Spaghetti (well, actually Angel Hair pasta) with homemade sauce and meatballs

Whenever I have company in town, I always have to make this for everyone. It's good, but it's a half day project! :2thumbs: I find that little kids always gripe about the veggies in the sauce, so I usually cut the pieces of bell pepper and black olives in big chunks - that way they are easily removable, but the flavor is still cooked in the sauce. :nod:

Dessert: It's that time of year again for beautiful Utah cherries! Yum!

Here's my dinner from last night. I was camping in Buckhorn Wash, and I just threw it on the coals from the campfire. I cooked a large potato in the microwave at home until it was mostly done, then diced it up, added bell peppers and onions and seasoning, and wrapped it in foil. For the fish, I took a frozen fillet and added butter, seasonings, and some lemon juice. And, as you can see, I'm quite the connoisseur when it comes to beer. :haha:

I think my plea fits best in this thread. Does anyone know where I can buy fresh sorrel? Sorrel, also known as dock spinach or shav, is a green, lettuce-like, and has a zesty, lemony taste. I love sorel soup. Heh, I gotta start posting here. I will settle for processed sorrel in a jar or can, too.

I've been doing lots of grilling and dutch oven...yes, one handed. Sorry for the lack of pics. I'll repent :haha: . Did some dutch oven teriyaki chicken w/ rice noodles and zucchini...a big ham roast...cajun porkchops...and last night grilled crappie in foil dusted in cornmeal & tony chachere's....YUMMMMM!

If your in Salt Lake I would try Liberty Heights on 1100 East and 1300 South? My wife likes to stop there when we are down that way for hard to find stuff. A little pricey.

And oh...Pecan Arugala Pesto I believe is on the menu.

I have to be down the 14th of aug to the ortho doc anyway...but I am pretty flexible. I'd love to participate either in the cooking or just the eating...doesn't matter to me, but I can't really volunteer someones' home. :mrgreen: ..........maybe a park somewhere? :ne_nau:

I would be available that weekend. 15th evening or 16th. I think the 14th might be tough for people who have to travel. We could meet at a park. I could easily get a pavilion at the Jordan River Parkway near my house off 10600 South. :ne_nau:

Found a place in Colorado that grows this weed, heh. It's $10 a pound. But the real kicker is they would have to do it overnight delivery so the cost of shipping would be $30 bucks alone, if not more. So I am not about to pay $40 - $50 for a pound of this type of weed, heh. Maybe when it gets colder and a two day delivery will be an option.

Did you try Calling LIberty Heights?

I'm gonna take a ride to Liberty Heights tomorrow. Also the guy from Colorado told me to go to their retailer on Fort Union and Highland and ask if they can order some of it.

Dinner today consists of grilled porkchops and grilled zucchini spears in olive oil and cajun spices AND fried yukon gold potatoes & vidalia onions....YUMMY!

A bit late in posting this. If any of you have not yet tried Lanikai Grill Hawaiian BBQ in South Jordan, you're in for a treat. You can't go wrong with the Lanikai Platter: Teriyaki chicken, garlic beef, Kahlua pork, sticky rice, macaroni salad. I tried Spam musibi for the first time, too. I NEVER leave hungry after treating myself to a Lakinai meal. Check them out at 1072 West 10600 South, in South Jordan City. :2thumbs: Acca can back me up on this, too!

Another late post - My wife cooked up some Chicken Fried Steak the other night. Her first attempt, and it was excellent! Sides of mashed red potatos w/ white gravy, mixed vegetables, and a buttermilk biscuit w/ homemade strawberry jam! :slobber:

I figured I'd share my family's secret recipe for delicious slightly salted pickles ;-)
What you need is small or medium fresh cucumbers. I got them at the farmers market this morning. Make sure they're firm. I paid $10 for this whole box, heh. Oh yeah! I found sorrel too so my sorrel soup recipe is coming up!

Additional ingredients include garlic, horseradish root (optional because it's freaking impossible to get here), lots of dill herb (can be fresh but dried dill is best), salt (preferably good sea salt or coarse kosher salt, the less refined the better).

Look at the pics and comments for how to make delicious pickles! Enjoy!
