For Spring Break, it seems a whole bunch of people are going to Moab. I'll probably be down there the latter part of the week myself. I've had a lot of people ask me for advice on what to do in Moab, particularly if you don't have a Jeep or ATV, and you don't have Canyoneering gear.
The popular tourist activities in Moab include
Arches National Park
Jeep Safari (participating or spectating)
Mountain Biking
Canyoneering
Whitewater Rafting
Dead Horse Point
Hiking to Corona Arch (the famous Arch Rope Swing)
Wall Street along the Colorado River (Rock Climbing and Petroglyphs)
Scenic Drives
If it's warm enough, check out this great swimming hole. Even if you don't swim, it's a fun short hike to see the nice little waterfall:

From the trailhead of the above hike, you can look across the creek and watch people attempt Potato Salad Hill:

Biking / Hiking on the Paved Trail just on the North side of town. This begins at the Colorado River, runs along the highway passing the entrance to Arches National Park, and continues up to the turnoff to Dead Horse Point State Park. On the way up to the Slickrock Bike Trail, or Hell's Revenge Jeep trail, up the Sand Flats road you'll pass Lions Back which is now closed.
