Where do you get off the beaten track?

The honeypot areas of Snowdonia, the Lakes, the Peaks, Cairngorms are all very good, but they do get very busy. Last weekend I did 10 miles in the Berwyns and didn't see a soul (apart from three people a mile away on a ridge) between leaving and returning to Llandrillo.
So where are the great areas where there is good walking but few people ?

Is it safe to assume you're in Scotland/Wales? My reply about local Utah destinations may not be of much help.
