How about 20 miles of forested singletrack and a free chauffeured shuttle?
I suppose to be a proper shuttle, the ride should be downhill and the shuttle up. In this case the shuttle (free Park City bus) avoids riding on pavement from Canyons Ski Resort back to parking at Park City Mountain Resort and saves some time. There is a nice bike path that parallels the highway if you aren't the shuttle type, not that there's anything wrong with that.
We climbed the newly opened uphill-only (bikes) Armstrong trail which is now nicely buffed and the only sustained climb of this route. It is mellow at about 6% and almost completely in the trees. We didn't need the shade as it was 39F when we started at 7:30 am.
There are lots of signs at the many trail intersections and it was easy to find our way north on the Mid Mountain trail, start back down at Rob's, and then to stay on dirt as long as possible, use Colin's to get down to the highway as opposed to going through the Canyon's Resort base. A map is not necessary, but the best one is the Park City Summer Trails Map available for a donation at various bike shops.

The fall colors are pretty spotty:
