My dad (73 years old) came into town last fall and I took him through Las Vegas (New Mexico) to a peak I thought he could do named Hermit's Peak. I highly suggest it for a less rugged but still challenging enough journey (my dad is in shape). You can do it in a day but it is much better to wake up on the peak to the sun!
The terrain is fairly mild and the Ponderosa pines perfume the air nicely... lots of loop backs so not too much of a grade on the trail and some cool ruins to check out on top (hermit's cave and what not). I think it is something like a 8 mile hike total? Not quite sure on that.
