Trip between now and June 21st

I live in Salt Lake City, Utah and am looking for 1 or 2 night hike up to a lake or river to fly-fish. Looking to hike up to 16 miles (roundtrip). I will most likely be going alone.

Looking for anything within a 300-mile radius of SLC, Utah between now and June 21st.
