The wife and I took a hike above the University of Utah hospital the other week. I found out later that it is called Mt. Van Cott. The trail we took starts at the Huntsman and goes straight up the mountain. There appear to be many different ways to skin this one as the Bonneville Shoreline is there with many trails going up the random ridges. It only took about a half hour to get to the main summit but you can continue to head back into the Wasatch from there. Great views of SLC and it would be an awesome sunset hike.
