It's growing in popularity up here. My family grows sweet corn on the farm and sells it to all of the produce stands.

We're having a going away party for my son this Saturday. I'm cooking dutch oven au gratin potatoes, terminator beans (also dutch oven), grilled burgers and dogs. We'll also be having a veritable cornucopeia of salads andd desserts. It should be good, but I guess as the cook, I'm eatin' last.

WOW!! Try to snap a few photos.......that sounds great!!! You know there is almost as much satisfaction cooking for others as eating it yourself. Shan mentioned her Italian mother in law. Italians love to see you eat and some even get a bit offended when you cant put it away. I have eaten with many of them and they have like 3 or 4 course meals. I had a hard time putting it all down. :lol8: Great food though, I luv it!

My wife cooks some damn fine meals, but once it hits my plate, it's on a fork and in my mouth.

I've got to remember to capture one of these meals on film next time.

Maybe you'll see one with a few bites missing. That's when I remembered to get the camera. :popcorn:

Went up to Peach Days in Brigham City, today. On our way back we not only grabbed a half-bushel of peaches (can you say "cobbler"?) but we also stopped at Maddox and picked up some fried chicken, the best in the state!

Thanksgiving Day!

Deep fried Turkey! You know what that's all about. It's a family tradition. For those of you who haven't had it, you're missing out. Even the skin is crispalicious.

I'm not quite sure. I think maybe 45 minutes? I don't know much about it yet, but I believe the temp has to be over 180 F.

That sounds yummy. Do you use a cola in the recipe? I'd rather do something like that for a holiday meal during the summer with a bunch coming over rather than swelter over a bbq grill. How about sharing the recipe?

I used boneless pork ribs, also known as country style ribs.

I put about 3 pounds in a crockpot with a 14 oz. can of low sodium beef broth on LOW.

Cook about 6-8 hours, you remove the pork and shred it with two forks, even two spoons would work it's so tender! Pour the liquid into another bowl.

Then return the meat (minus and fat if you want) to the pot add a bottle of BBQ sauce (or make your own), then a little of the cooking liquid if it's dry, cook for another hour or less!

I like mine with mayo and relish on a bun, yup!

I think that would feed 8 people well. I fed 4 people and had a cool whip container full of leftovers. We used big buns too.

Ok so here is what we had for dinner last night. Homemade pizza and I had an artichoke. We made half and half cause the wife doesn't like vegitables. She had sausage and I had vegitarian. Tomatos, onions, mushrooms, artichoke hearts, and green peppers. All put on home made dough with red and white sauce. I steamed the artichoke and had it as an appitizer with mayo. Delicious.

We spent some time catching some crawdads last week here are the before and after shots. My wife and kids wouldn't each them, but my brothers and parents dug in. We had 200+ dads, I thought we wouldn't finish them, but after an hour, all that was left was some new pototoes. Zatarains crab boil, sweet onions, quartered lemon, and new pototoes. These little buggers were terrrific, but a real work out getting a bite of flesh. Sorry I'm not into sucking the "head juices" like an authentic cajun.

Where did you catch the dads? I took my three year old up to Strawberry for a few hours on Saturday. We didn't have any luck with the dads, but he managed to hook an 18" cut. Hey thanks for bringin' this thread back up. I love to see what people are cookin'. My wife and I love watching the food network and trying new things. :eat:

We tried by ladders, but only caught a couple there. Then we drove to soldier creek marina. There were tons there and it only took a few minutes for the dads to cover the chiken legs. A net proved very helpful in catching a higher pecentage. I had 2 traps that were basically useless compared to the bare chiken leg on a string. The kids had a great time catching them but wouldn't touch them after they were cooked.

Dang! I haven't seen that many crawfish since I left Luzianna! Looks really yummy to say the least. And I am a born and raised La girl, but sucking the heads grosses me out as well. :eek2: Guess I'm not pure Cajun. :haha: Where did you find these critters?

There are some nice spots at Strawberry bay. They all have covered tables at each spot. Kinda the crowded area of the lake but has some nice conveniences.

We caught these at the marina at soldier creek on the rocks. You need to find a rocky area. We tried at ladders and caught a few, but those tasted different (not good) maybe because it was a sandy/muddy area with lots of weeds. We caught a bunch at the gorge last year, but not nearly as many. There were small areas in about 4-5 ft of water that weren't in deep cracks that really produced. Sometimes we left the leg for 10 min and the leg would be completely covered with them, 6-8 dads fighting over a spot. Don't forget a net, it really makes the difference. sometine we caught 5 dads in one scoop.

I am a sys admin (Computer geek) for Weber School District in Ogden. I mostly work via e-mail and IM(instant messaging). So I get a lot of time in front of a computer....

I assume you meant outdoor wise....I love everything outdoorsy, but most of my friends are computer geeks, so that's why I hang out here. Hoping to catch the next ride down south with someone. Ice and rockgremlin took a pitty on me last time and showed me the awesomest sport of canyoneering. So now I am patiently awaiting the next trip (Ice, hint hint :naughty: )

And yourself? (Besides Zion and canyoneering)

Crepe night at acca's. :eat:

----------------------------------

4 eggs
1 cup flour
1/2 cup milk
1/2 cup water
1/2 teaspoon salt
2 tablespoons melted butter

Measure all ingredients in to blender jar; blend for 30 seconds. Scrape down sides. Blend for 15 seconds more. Cover and let sit for 1 hour. (This helps the flour absorb more of the liquids.) Makes 12-14 crepes.

Recipe Variations:

For a Sweeter crepe:
Add 2 teaspoons sugar and 1 teaspoon vanilla.

For a Chocolate crepe:
Add 2 tablespoons chocolate sauce to sweet crepe recipe.

Acca.......try this sometime when you're in a sweet tooth cooking mode:
(During the holidays, the calories are reduced by 90%) :haha: Stuff the crepe with vanilla ice cream and then top it with this:

FYI: Southerners pronounce praline "prawleen" not "prayleen" :2thumbs:

Praline Ice Cream Sauce Recipe

1 cup light brown sugar, packed
1/4 cup light corn syrup
1/2 cup half-and-half
2 tablespoons butter
1 teaspoon vanilla
1/8 teaspoon salt
1 cup pecan halves

Combine all ingredients in sauce pan. Stir constantly over medium heat for 10 minutes, until sauce is thick and smooth. Cool slightly before serving over vanilla ice cream. Makes apprx 1 1/2 cups

NOTE: May refrigerate for several days in covered container.
To reheat, add small amount of cream, then heat on stovetop until smooth.

Ok, I can play. It was Italian night at acca's crib. My wife made a recipe for Olive Garden Zuppa Toscana soup and some Creamy Artichoke Bruschetta. :eat: I love finding recipes on the internet.

Monday she is making Cafe Rio pork burritos. The pork will have to go in the crock pot Sunday night at 11PM and come out in time for dinner. :2thumbs:

1 15 oz. can of Western Family Hot Chili Con Carne with Beans warmed to perfection in the microwave (2:20 on High)

2 slices of wonder bread, buttered lightly on one side

It's growing in popularity up here. My family grows sweet corn on the farm and sells it to all of the produce stands.

...actually yesterday's dinner/late late night had six 6' Subway party subs, 20# of eggrolls, 8 pizzas from Pizza Hut, 40# of footlong hotdogs, 50# of hamburgers, 10# of tortilla chips & nacho cheese sauce, 5gals of salsa, 100 bagels & cream cheese, 4 fruit & veggie trays, 300cans of soda, several sheetcakes, 12 boxes of icecream sandwiches....at the Senior All Nighter party ( i ate veggies, fruit & an eggroll) :ne_nau:

Well, I was tired of sandwiches so I made kalua chicken....chicken breasts , sea salt, teryaki sauce & pepper grilled over charcoal & mesquite chips, since I didnt have any imported island wood from Hawaii...and no maui sweet onions to grill so I used sweet vidalias with olive oil, salt & pepper grilled with the chicken....fresh tomatoes, baby greens & salad with a raspberry walnut vinagrette & parmesan cheese.....ummmmmm!

Ok, so tonight the wife had to work tonight so dinner tonight was pretty much up to me. I decided to head on back to my bachelor days and made what I'm calling "The Ultimate Bachelor Burger!!" I'm probobly not the first person to think of this but it's the first time I've tried it. I took 1/2 a pound of hamburger and smashed it flat. I then took some diced onions, green peppers, and cheese and put it on top. I folded the meat over so all the stuff was inside the burger. Threw it on the grill, more cheese on top, onto the bun with mayo, mustard, lettuce, and dug in. It probobly would have been good with jalapenos but I had to work with what I had. I'm proud to say I was a big boy and finished the whole thing. The only down side, I cut my finger open dicing the green peppers. Man those Ginsu knives are sharp. :haha:

Ok - I got to cook today and I was missing some island cooking SO, I got out the cast iron hibatchi, loaded the briquettes, soaked the mesquite chips and proceeded - Hawaiian BBQ chicken breasts and grilled sweet onions -OH MAMA!!-
1/3c. pineapple juice
1/2c. peanut or sesame oil
1/3c. soysauce
1/4c. dark molasses
teaspoon of FRESH ground ginger

take thawed cleaned chicken breasts ( legs will work too) and soak in a sea salt brine for a couple hours & rinse before grilling.
baste with sauce while turning
drool alot while cooking

grilled onions - I prefer Maui sweet onions but vidalias work well too. Cut into 1/2" slices making sure youkeep th eslices together while grilling. Dip in olive oil and season with sea salt & pepper.

OH, and I made dutch oven peach/pineapple cobbler too :mrgreen:

this usually happens on my days off...I am sick of boxed lunches I have survived on all week and it's time to COOK! This is what I had for lunch today: zucchini served over vermicelli...sounds simple right?
1 small zucchini 6 to 8 inches to avoid unwanted seeds and softness cut into strips. pour olive oil and a tsp of butter for flavor in a pan and sautee a clove of fresh garlic. add zucchini and season with oregano, thyme, basil, and any number of flavors you drool over, salt and pepper...cook til it all starts to just soften and pour mixture over vermicelli - I seasoned the vermicelli about the same. I forgot the mushrooms until I was eating but that'd be good with portabellas - sprinkle the whole thing with parmesan cheese.
..you can add about a 1/3c of cream to this and a dash of cayenne for a change but I LOVE it the way it is.

HAHA yeah. It is just some thousand Island, cheese, and smashed crackers. I don't like my salads to be healthy.
The aussie chicken is a chicken breast with bacon and mozarella on top of it with a honey mustard sauce on top. Its delicious. My wife makes it so I don't really know the recipe, if interested I could get it.

If the Pyrex starts to show the veggies browning the glass, they're done. Easy clean up. Nothing burnt to the dish, nothing stuck on it :lol8:

Wheat germ is SUCH a fabulous source of vitamin E........another thing you can add to a fruit smoothie would be some Brewers Yeast. One TBSP of that gives you tons of amino acids as well as all your vitamin B's.......good stuff!! Your veggies look yummy!! Try roasting some sweet potatoes, parsnips, carrots and onion in light olive oil with fresh rosemary and garlic. YUMMY!! And oh so good for you. Keep it up JP. :2thumbs:

The wheat germ/corn meal coating did keep some of the juices in while cooking. Little on the bland side of things, but stopped the chicken from burning and held onto some of the juices.

Here was tonights meal :haha: Even the steam/heat could be seen. The sacrifices we make for the Net :haha:

Alison's Summer Salad Packed full of antioxidants:

Bag of Spring Mix
Gorgonzola cheese
Orange slices, cut up into chunks
Blackberries (or any berries work)
Tomato
Honey glazed walnuts

Dressing:
Raspberry vinager
honey
light olive oil
spash of OJ/orange zest


Honey glazed walnuts: Place walnuts on foil, toss in little bit of olive oil and lots of honey. Place in oven or toaster oven and roast them, but don't burn them. They cook QUICK! Immediately remove them from the foil so they don't stick, throw them in a bowl, let them cool.

Dressing:
Mix Rasp vinegar, honey, Olive oil and OJ with a little zest to taste. It should be a light sweet dressing.

Toss everything together, once the walnuts have cooled and YUMMY!! Packed full of antioxidants, vitamin C and good fats (walnuts) and trace minerals (honey).


It's a great salad to have along side of a grilled peice of MEAT. Or K-bobs of some sort. Very filling.

So I get home from work this afternoon and upon opening my front door, my olfactory senses are awakened by the scent of taco meat simmering.
Mmmmmm. Just now how I'm used to taco meat simmering.

My wife had the ol' crock pot slow cooking away on the counter, so I went over and took a peek. It smelled sooooooo delicious that I almost dished up a bowl of the yummy looking concoction inside.

She decided to try out a new recipe, "Crock Pot Chicken Tacos", served atop piping hot Navajo fry bread.

We grated some Mexican blend cheese, whipped up some fresh guacamole, broke out the sour cream, and chopped up some crisp Romaine lettuce to top it off. :slobber: Oh, man. This was a treat.

Check out the photo....This was actually the second one I pounded for dinner. We used the leftover frybread dough to cook up a tasty dessert.

If anyone wants the recipe, lemme know. This one WILL be back on my plate SOON! :2thumbs:

Fathers day dinner I decided to smoke some salmon. My wife also got some crab legs so I thought why not smoke them too. Well I am a noob at smoking and I think I went a little overboard on the woodchips, too much smokiness. The crap legs were actually pretty juicy but I prefer it without the smoke flavor. We also had stuffed crab, popcorn shrimp, and red lobster knock-off cheesy garlic rolls. The rolls were better than at Red Lobster!
The salmon is all ripped up because I already went through it looking for bones.

OK, Jaxx and fellow Bogleyites............ Here's how to make those awesome "Crock Pot Chicken Tacos"!

Ingredients:
2-3 chicken breasts (or you can use 7 or so chicken breast tenders)
1 can chicken broth
1 pkg taco seasoning
1 cup salsa
1 can corn, drained
1 can black beans, drained

Place the above ingredients in the crock pot on high for 3-4 hours on HIGH. Just before serving shred chicken and add:

1 cup sour cream
1/2 cup shredded cheese

Serve over piping hot Navajo fry bread, recipe below! Top with: Grated cheese, lettuce, tomatoes, onions, salsa, avocados/guacamole, or anything else that sounds good.

This stuff is runny, and can be eaten like a soup, so you could try that too.

Ingredients:

Here's my dinner from last night. I was camping in Buckhorn Wash, and I just threw it on the coals from the campfire. I cooked a large potato in the microwave at home until it was mostly done, then diced it up, added bell peppers and onions and seasoning, and wrapped it in foil. For the fish, I took a frozen fillet and added butter, seasonings, and some lemon juice. And, as you can see, I'm quite the connoisseur when it comes to beer. :haha:

Here's my dinner from last night. I was camping in Buckhorn Wash, and I just threw it on the coals from the campfire. I cooked a large potato in the microwave at home until it was mostly done, then diced it up, added bell peppers and onions and seasoning, and wrapped it in foil. For the fish, I took a frozen fillet and added butter, seasonings, and some lemon juice. And, as you can see, I'm quite the connoisseur when it comes to beer. :haha:

Very nice! I am headed up to Bear Lake middle of next week for 6 days. I am planning on having some fires on the beach and your giving me some good ideas. The ole tin foil dinners are sure good and bring back memories. :2thumbs:

I've been doing lots of grilling and dutch oven...yes, one handed. Sorry for the lack of pics. I'll repent :haha: . Did some dutch oven teriyaki chicken w/ rice noodles and zucchini...a big ham roast...cajun porkchops...and last night grilled crappie in foil dusted in cornmeal & tony chachere's....YUMMMMM!

If your in Salt Lake I would try Liberty Heights on 1100 East and 1300 South? My wife likes to stop there when we are down that way for hard to find stuff. A little pricey.

And oh...Pecan Arugala Pesto I believe is on the menu.

I have to be down the 14th of aug to the ortho doc anyway...but I am pretty flexible. I'd love to participate either in the cooking or just the eating...doesn't matter to me, but I can't really volunteer someones' home. :mrgreen: ..........maybe a park somewhere? :ne_nau:

I would be available that weekend. 15th evening or 16th. I think the 14th might be tough for people who have to travel. We could meet at a park. I could easily get a pavilion at the Jordan River Parkway near my house off 10600 South. :ne_nau:

A bit late in posting this. If any of you have not yet tried Lanikai Grill Hawaiian BBQ in South Jordan, you're in for a treat. You can't go wrong with the Lanikai Platter: Teriyaki chicken, garlic beef, Kahlua pork, sticky rice, macaroni salad. I tried Spam musibi for the first time, too. I NEVER leave hungry after treating myself to a Lakinai meal. Check them out at 1072 West 10600 South, in South Jordan City. :2thumbs: Acca can back me up on this, too!

I figured I'd share my family's secret recipe for delicious slightly salted pickles ;-)
What you need is small or medium fresh cucumbers. I got them at the farmers market this morning. Make sure they're firm. I paid $10 for this whole box, heh. Oh yeah! I found sorrel too so my sorrel soup recipe is coming up!

Additional ingredients include garlic, horseradish root (optional because it's freaking impossible to get here), lots of dill herb (can be fresh but dried dill is best), salt (preferably good sea salt or coarse kosher salt, the less refined the better).

Look at the pics and comments for how to make delicious pickles! Enjoy!

I found a fabulous recipe for French Onion soup on foodnetwork.com. It was the perfect dinner for a blustery evening. I also made a caesar salad with dressing from scratch. Speaking of gadgets. My wife just broke our most favorite spaghetti scooper and I can't find another one for the life of me. Maybe one of you guys would know.

It's a scooper that has a couple of scooping teeth on the end, but also within the plastic handle it has 3 holes for measuring how much spaghetti to put in. One hole = 1 person, middle hole = 2 people, large hold = 3 people. We used that religiously and it was always perfect portions of spaghetti.

It's a pretty flat utensil about a foot in length, has anyone seen it/knows where to buy one?

Spoons N Spice has just about everything. It's located in Sandy at the Sandy Mall (9400 S and 700 East). I think there is also one around Sugarhouse somewhere - or at least there was at one time.

My two favorite kitchen gadgets:

Headlamp because the overhead light isn't always enough when knifing and the goggles allow massive onion sessions w/o the horrible weeping and wiping. Still gets the nose, though. In the photo, I'm preparing a big onion chop to make one of my favorite new recipes: Indian-spiced turnips!

I just had hubby re-install my hanging pot rack so I could create more room in my one butt kitchen. I now have all the pots and pans UP on the ceiling and I now have a whole new cupboard for MORE gadgets. :2thumbs:

Tomorrow I am doing a mini-thanksgiving dinner for my boys since this will be the first Thanksgiving I spend away from them. Pics will follow tomorrow evening. :nod:

I'd have to check the website out for the actual 'recipe' but it's one of Alton Brown's. I watched Iron Chef America last night - secret ingredient 'Squash'. I generally get the 'recipe' and put my own twist on it a bit. One of my favs is Alton Browns' "40 cloves of garlic and chicken" ...and most anything Giada cooks. Rachel Ray is good but she bugs me to watch her...don't know what it is :ne_nau:
Our gadgets are mostly PamperedChef and Cuisinart...and a mess of cast iron cookware and Pyrex. Gotta have Gadgets! :five:

We had a great time! I did a homemade butter cream frosting and edible glitters for fun. I think I over did it. I tend to have that more is better mentality with food. I tried my hand a Boboli crust pizza tonight. Used my own vodka & cream pasta sauce, fresh mozzarella, dry salami, sliced tomato, Crimini Italian brown mushrooms, orange bell pepper, red onion, smoked oysters (from a can) and diced Habanero and feta crumbles sprinkled on top.
Damned good, but I think I could drop a few ingredients and still have a damn good pie.
Served with a nice stout Guinness.

Thanks. I have enough cheese and stuff left over I think I'm going to make another one tomorrow or Tuesday. My son wouldn't touch it (the peppers are a big turn off for him right now) so the leftover slices made a great lunch for me today!

Yeah, I looked at that when you posted it, and started drooling. And there's nothing better than leftover pizza! I wouldn't call it overdoing it at all. Never had smoked oysters on a pizza, myself, though I do love 'em. My wife would kill me if I tried it, though.

I've been cooking a lot of Indian food, in big batches to freeze individual portions for work. Not very photogenic, though. Today's batch of palak paneer (spinach and cheese) looked like a pot of baby poop with white squares floating around in it...

Round two. My son has a cold so while he's eating chicken noodle soup I'm free to pile on the peppers mushrooms and onions.
It's pretty much the same as the last one but with olives and spinach. It'll be nice for lunch tomorrow! :haha:

I kind of mix and match ideas from different online recipe places. I google, say, palak paneer, or paneer makhani, or chicken makhani. Read 2 or 3, and have at it.
