Thanks guys! I don't use just any pickles but "old style" pickles in brine. The kind you get from a wooden barrel at a Jewish kosher store :2thumbs: These happen to be German.
As far as the dough is concerned - it was a bit too dry and crumbly. I used 3 1/2 cups of flour, cup of very warm water, 1/4 olive oil, 1 tea spoon of salt, 2 tea spoons of yeast.

Check out allrecipes.com and do a search for pizza dough. They will list out the recipes most liked by users with a star rating. Everything that I have made with a 4 or 5 star seems to be true to the taste buds and it's good stuff. The thing about Pizza dough is it can be REALLY GOOD or really not good........kinda like pancakes. :lol8: Speaking of dinner.......I must start my soup! :rockon:
I tried a new twist on the Vodka-cream pasta sauce; Pancetta (rolled Italian bacon).
For starters I bought a new deep saute pan! In it I started with extra virgin olive oil, diced red onion, garlic and the pancetta, only the equivalent of about 1 regular strip of bacon, cut into small pieces. The onions were done about the same time as the bacon. At this point I added a pound of ground spicy Italian sausage. I stirred it all together and added salt, pepper, oregano and basil. When the sausage was done I drained the oil and added half a cup of vodka and let it boil for two minutes. I then added a 30 ounce can of tomato sauce and half a cup of heavy cream. After simmering for about half an hour I shredded in some Parmigiano (see the first picture).
In the mean time I cooked up the Fettuccine, diced a couple tomatoes to add the the sauce right as it comes off the heat and broiled the asparagus. Never tried that before either and it turned out pretty good.
Some Wasatch Winterfest Ale and garlic bread on the side. Here's pictures:

I do a Carbonara w/Pancetta and also a fancy McMuffin using Pancetta and smoked Gouda instead of regular ham and cheddar.
Tonight we went Thai. Shrimp and veggies w/Coconut milk curry. I reveal my secret ingredient the "Taste of Thai" Red Curry Paste. I've tried making the curry paste from scratch and it's a real pain. Add some fish sauce, lemon grass (tube or fresh) and a little brown sugar to the coconut milk and pour it over the stir fry when it's all done. It got :2thumbs: from my wife but a bit spicy for my son.
The Lagunitas IPA (from Petaluma CA) was my choice of malted beverage.

I LOVE to grille! For lunch today: grilled fish in cracked black pepper & seasonings, grilled pineapple dipped in honey and sprinkled with cayenne pepper & served over a bed of angelhair, butter pepper & grated fresh parmesan. for dessert....in foil...banana & pineapple with coconut milk and dark chocolate. Shrimp Etouffee was on the menu tonight. Sure, Louisiana has some great food but all of the recipe's are on the internet. Now if I could just figure out a way to avoid going there altogether. :eat:

We had crawfish etouffee at my sister's house tonight only I didn't take a photo of it. Believe it or not, we found a really reasonably priced source for crawfish tails out here. Needless to say, it was excellent! :2thumbs:

This is what we had for dinner last night. Only thing not pictured was corn on the cob. Yummy cajun burgers, macaroni salad, potato skins, kabobs, grilled pineapple, and patriotic cupcakes (made from scratch!). Great 4th party. My cocktails ended up looking purple instead of red and blue but they still tasted good. :lol8:

Couldn't wait for dinner or time to take a pic of it so I did brunch today after my workout:
2 egg omlette w/ a tbsp of heavy cream
chopped turkey
extra sharp cheddar
roasted pepper olives - chopped
salt to taste
prepare omlette
sprinkle with cheese
pour homeade chili verde over it. Home grown roasted poblanos in the chili. DAMN good. Warm peppers....ok. HOT, but hard to resist!

One of my favs is hard boiled eggs, pickles, and spam(straight out of the can). Run them all through a salad shooter into a big bowl add a bit of mayonaise and mix. Put it between two slices of bread. Yummmmy!

Spam is part of the food storage but I never really had a plan for how to serve it. I'm going to have to rotate stock and try both of these!

I'm looking for a good pizza dough recipe. I've got one of those inserts for my gas bbq grill that holds a pizza stone. I have this vision of making fresh pizza with a thin crust and all sorts of delish toppings. But so far my dough has been disappointing. I did some tomatillo, roasted garlic and carmelized onions for a topping that was pretty great though.

My fave pizza consists of caramelized onions, a mix of mozza and chevre, and pine nuts. The roasted garlic would be a good addition to that, for sure...
We just finished installing our very first ever vegetable garden in our new yard (we moved last summer). Just 2 raised beds right now, 4' x 10' each. Two more beds to come, either next year or the following one. I installed irrigation (drip lines, valves, timer) for both, with plumbing for the next two as well. Today we planted a bunch of stuff - ranging from carrots and radishes, to onions, leeks, garlic, etc. Already wishing we had twice the room. Hell, we'd do one entire bed in leeks, probably...
Here are a couple shots of the beds - one in progress, one completed. The trellises aren't in place yet - there will be one at the north end of each bed - the end closest to the house, for tomatoes on one, and cucumbers on the other. Still a few empty spots with seeds planted, and a couple spots for the last few plants...
We look forward to cooking with our own "crops" - a new thing for both of us!

I cheat. Go to your local grocery store and ask for the french bread dough that they use to make fresh baked french bread. They will sell it to you unbaked. It makes good pizza dough. I can make it from scratch but I don't have the time and sometimes it works and sometimes it doesn't.

Kev's garden looks great! I've got to build a deer-proof fence and get serious about gardening. I've tried things on my deck and they'll even come up on the deck to eat stuff.
Tonight's dinner: Spaghetti Carbonara. The secret is good pancetta, the more the merrier, and to separate the whites/yolks. You add the whites to the cooked pasta first and toss it in the pan under low heat. The whites cook and make little white specks all over the pasta. Then the add the yolk and just toss to let it coat all the pasta. Aaron has a friend over and the four of us devoured all of it!

Ok, so heres what I got. One plate is my steak, medum rare with garlic and parmesian cheese one top. There is some mashed potatos on there and then some fried potatos with a lemon sauce. First time we tried that. Wasn't great. The other plate is the same minus the steak. (The girlfriend is vegitarian...kinda) She has a piece of hailibut that we covered in oil, salt, pepper, and garlic. First time I've grilled fish outside of tin foil. Not a bad first try33693.33692

My favorite dinner is instant mashed potatoes at 12,000 feet. Or coffee from freshly ground beans after a day of backpacking. Or instant oatmeal when camping in snow. Or...sheesh, just about anything that doesn't come out of my kitchen. :mrgreen:

OK. So my family and I go to my Mother-in-laws for Mother's day dinner. My sister in law kindly volunteers to bring all the fixings for mexican food. You know, the fresh corn tortillas, carne asada...etc. She apparently bought it at an authentic mexican market. We are lined up and my oldest daughter (15) who is directly in front of me looks in the pot and quietly says "Dad, what kind of meat is that?" We were told that it was beef, problem is, it wasn't the normal beef my kids or wife are used to. I said, "you may want to try the pork." She of course didn't have the faith in me to just quietly eat the pork, so she askes, "Why?" I whisper to her that it is cow tongue that she is seeing and those little white bumpy things are tastebuds. Then the wretching begins. Then my 13 year old daughter hears my oldest making a scene and she askes what is up. She was in line also in front of me. My oldest tells her and child number 2 starts to wretch..... No one lost it but they came close. I had three tacos.... :lol8: I tried my best to make them be quite so as not to offend anyone, but that was mostly useless. My sister-in-law apparently had no idea what she bought. It just tasted good when she ate a sample. Of course, after discovering what it was, a couple of brother-in-laws had to tell of other weird/disgusting things they have eaten. My wife then starts to get sick..... Most entertaining Mother's day meal yet.:haha:

Agnolotti (similar to ravioli), stuffed with portobello and crimini mushrooms (I should have gotten a picture of the inside but they're gone now), topped with marinated mozzarela and capers. Served with a tomato, olive, artichoke heart and mozzarela salad and a Wasatch summer ale. Yum.

Hey Pelon1, what kind of smoker do you use? I am interested in getting one and I am not sure whether to get a gas, electric or good old fashioned stoke your own fire smoker. I was thinking of gas just so I could take in to freezefest or other non-electric settings.

I have an 18" Camp Chef Propane that I am going to switch to natural gas. It would be perfect to take on such outings but I will keep it on the back porch. Unless I get a 24" for the house then the 18" could be my portable model. I have only had it 3 or so weeks but it has performed well.:clap:

Dude!!! That's the best part! Lard is awesome! When I was a kid, my mom used to cook with buckets of that crap...Crisco, I believe. She'd make gravy out of it...
